Sweetcorn is a good source of betacarotene. It is also a good source of fibre. For young babies it is best to puree sweetcorn through a mouli as it will be easier to digest and have a smoother texture.

Suitable for freezing
50g onion, peeled and chopped
25g butter
175g carrots, peeled and chopped
200g potatoes, peeled and chopped
250 ml vegetable stock or water
50g tinned or frozen sweetcorn
1 to 2 tbsp milk
Melt the butter in a pan and sauté the onion for one minute. Add the carrots and sauté for 5 minutes. Add the potatoes, cover with the stock or water and cook over a medium heat for 15 minutes. Add the sweetcorn and continue to cook for 5 minutes.
Puree through a mouli and stir in the milk to make a good consistency for your baby.
