I came up with this little snack whilst visiting friends Germany last year. With no shops nearby, luckily they had a well stocked larder.
Nuremberg sausages are pretty commonplace all over Germany, but you can pick them up from any supermarket in the UK.
This is perfect for a Saturday afternoon snack for the whole family, or paired with rice and salad it’s a main meal.
Serves 4 (or 6 if served with rice and salad)
You will need:
12 x Nuremberg sausages
2 x Green Peppers, sliced
1 x White Onion, diced
1 tablespoon of Green Pesto
A handful of Parmesan cheese
Preheat a frying pan or Wok to a medium heat, and put small glug of Olive Oil in. Wait a minute or so then put your sausages in. Cook them for a few minutes then add your green peppers and onions, cooking together for 6-7 minutes. At this point season with a little salt and pepper.
After a few minutes everything will have a little colour, so you can add the pesto. Stir your ingredients together thoroughly and cook for another 3-4 minutes.
Turn off the heat and serve into bowls, sprinkling a generous helping of Parmesan over each.
Serve
*to turn this into a full meal, serve with any microwaveable rice (Uncle Ben’s, Tilda or any supermarket do their own) and coleslaw.
**very low carbs if done without the rice
