This sticky garlic meatball casserole is so full of flavour, you won’t know what to do with yourself. It goes down especially well with toddlers as they can dip their bread and almost everyone loves meatballs.
You will need:
24 beef meatballs
1 red or white onion, sliced
150g runner/green beans, washed and sliced across (or you can buy them frozen and ready chopped)
4 cans of chopped tomatoes
1 tbsp of very lazy garlic
1 tbsp of tomato puree
1 Beef stock cube
3 bay leaves
Salt and pepper
Heat your slow cooker on a high heat (or using the saute setting), and put your onions, lazy garlic and tomato puree in. Add a little salt and pepper, then stir until they start to soften. Add your meatballs and do the same, making sure everything gets coated.
Add your chopped tomatoes, runner/green beans and bay leaves in. Keep everything cooking on the high heat for a few minutes, before reducing the heat down to low.
As always with One Pot Wonders, cook for as long as possible but three hours minimum is a good bet.
Serve with crusty bread and/or sautéed potatoes.
