Annabel Karmel Caterpillar Sandwich

This cheeky caterpillar makes the perfect centrepiece for a party spread.

MAKES: 4 portions

Ingredients

8 slices of bread

Soft butter

5 slices of Gruyere cheese

4 slices of ham

1 large tomato

A little cream cheese

Pitted black olives

Cucumber

Cocktail sticks

1 cherry tomato

Black icing pen

Rocket leaves

Equipment

Small round cookie cutter

Small flower cookie cutter

Method

Put the slices of bread on a board. Spread with butter. Top four slices with 4 slices of cheese and the ham, then sandwich the bread together. Stamp out four small rounds from each sandwich and arrange on a serving board in a curved shape. 

Using the remaining slice of cheese, stamp out two small rounds of cheese and black olives for the eyes and a semicircle for the mouth. Stick onto the tomato using a little cream cheese. 

Slice the cucumber into two small strips. Insert half a cocktail stick into the cucumber strips, then stick in the top of the tomato to make the antennae.

Make a small ladybug out of half a cherry tomato and half a black olive. Add spots using black writing icing.

Stamp out cucumber flowers using a cutter. Scatter rocket and cucumber flowers around the caterpillar.
