Annabel Karmel’s BakeD Veggie Gnocchi
Kids love a pasta bake so why not try a gnocchi bake to mix up mealtimes this week. Gnocchi cooks in minutes so this recipe is perfect for those evenings when time isn’t on your side. Plus it’s loaded with veggies so no sides needed!
MAKES: 4 portions
Ingredients
25g butter
1 onion, chopped
2 tbsp flour
500ml milk
1 tsp Dijon mustard
150g Cheddar cheese, grated
500g gnocchi
200g broccoli florets
100g peas
12 cherry tomatoes
Method
Heat the butter in a saucepan. Add the onion and fry for 5 minutes. Add the flour and stir for a few seconds. Blend in the milk and stir until slightly thickened and boiling.
Remove from the heat and add the mustard, half of the grated cheese and lightly season.
Cook the gnocchi and broccoli in boiling water for 3 to 4 minutes. Add the peas just before draining.
Add the gnocchi and vegetables to the sauce with the cherry tomatoes. Mix well. Tip into an ovenproof dish. Sprinkle the top with the remaining cheese.
Place under a hot grill for 5 minutes until bubbling.
