Annabel Karmel’s Beef & Veggie Noodle Stir fry
Introduce new flavours with this tender beef stir fry. It’s also the ultimate super speedy mid-week meal.
MAKES: 4 portions
Ingredients
2 tbsp sunflower oil
100g onion, chopped
100g red pepper, diced
100g carrot, diced
250g lean minced beef
2 cloves garlic, crushed
100g Chinese leaf, sliced
100g sweetcorn
3 tbsp hoisin sauce
1-2 tbsp soy sauce
300ml chicken stock
150g medium egg noodles
Method
Heat the oil in a wok. Add the onion, pepper and carrot and fry for 4 minutes.
Add the mince and brown until sealed.
Add the garlic, Chinese leaf and sweetcorn and fry for a few minutes.
Add the stock and simmer for 3 to 4 minutes. Cook the noodles in boiling water according to the packet instructions, drain and add to the wok. Mix well.
