Crispy chicken & Sweetcorn Croquettes - By Annabel Karmel
These crispy croquettes are just as tasty cold as they are hot, so pop them in your little one’s lunchbox for a delicious and healthy addition to their lunch, or quick mid-afternoon energy-boosting snack.
Makes 12 Croquettes.
Ingredients
100g broccoli florets
150g cold mashed potato
2 tbsp mayonnaise
100g sweetcorn, drained
4 spring onions, finely sliced
100g cooked chicken, finely diced
25g Parmesan cheese, finely grated (or dairy-free alternative)
1 egg, beaten
60g panko breadcrumbs
Method
1: Steam the broccoli in a steamer for 4 minutes. Cool and chop into small pieces.
2: Mix the mashed potato, broccoli, mayonnaise, sweetcorn, spring onions, chicken, Parmesan cheese and half of the panko breadcrumbs together in a bowl. Season lightly (for 12 months+).
3: Shape into 12 sausage shapes with your hands.
4: Dip the croquettes into the beaten egg and then roll in the remaining panko breadcrumbs.
5: Heat a little oil in a large frying pan. Add the croquettes and fry for a few minutes until golden on all sides.
