Annabel’s Apricot Cookies - By Annabel Karmel

These apricot cookies are so good that I’ve put my name on them! Sweet, crunchy, and so incredibly easy to make – what’s not to love!?

Makes 18 Cookies.

Ingredients

100g unsalted butter

100g cream cheese

100g caster sugar

75g plain flour

50g dried apricots, chopped

65g white chocolate chips

Method

1: Preheat the oven to 180C/350F/Gas Mark 4.

2: Cream together the butter and cream cheese. Add the sugar and beat until fluffy.

3: Gradually add the flour, then fold in the apricots and chocolate. The dough will be quite soft but don’t worry!

4: Drop heaped teaspoons of the mixture onto non-stick/lined baking sheets and bake for 15 minutes or until lightly golden.

5: Allow to cool and firm up for a few minutes before removing from the baking sheet and transferring to a wire rack to cool completely.

6: Store in an airtight container.
